a partial container of gingerbread pancake/waffle mix was in the cupboard. on the counter top were two very ripe red pears. on another counter sat a package of pumpkin spiced pumpkin seeds (roasted and seasoned - they're like biting into heaven) from trader joe's. so a thought was thought .. and i made a cake. no recipe was used but i'll do my best to share the process best as i recall. the cake's for dessert tonight - a treat for the hubs. but someone needed to be the cup-bearer to ensure the gorgeous morsel is safe to consume. ahem. as such, i chose to sacrifice. wink. know what? it's awesome, if i say so myself and i just did say so myself. read on... 

{ ginger-pear cake ala jAne }
...ingredient measurements are approximate...

1.5 cups gingerbread pancake mix
1 cup flour
1/4 cup brown sugar (not packed)
1 tsp cinnamon

1/4 cup melted butter
2 eggs
1/2 cup pumpkin greek yogurt
1+cup whole milk (may need a bit more 
when mixing with dry ingredients)

mix dry and wet together and plop into a pam'd glass pie plate.

combine some brown sugar, a couple tablespoons butter, 
flour, and cinnamon. add to the top of your wet mixture.
sprinkle about 1/4 cup spiced pumpkin seeds over that..

bake at 325 for about an hour but check at 45 minutes.

tonight i'll serve a slice alongside a small 
dollop of plain greek yogurt.

** the only change i'd make is to add a tiny pinch
of chipotle seasoning. really. **
