white bean soup.

anticipating a visit from our 
niece & her hubby,
i flitted through my recipes 
and decided to make a soup 
originally shared on my 
tickleberry farm blog. 
 the soup, along with a dark
green leafy salad, crusty bread,
and a rustic apple pie..
should go far to coat our tummies
and offer some good nutrition.

from the pantry to the pot to the bowl . .

.white bean soup.

start by chopping some celery, onion, and carrot .. throw it in the pan along with one leftover (is there such a thing as leftover bacon? really?) already cooked bacon slice and a good drizzle of olive oil. add fresh cracked pepper, a twist of kosher salt, some dried parsley (1T) and a bay leaf. saute til vegies are almost tender.

now add about a cup of chicken stock 
and simmer a bit til 
the liquid is reduced by half. 

then add two cans (drained) of white beans and give it a good stir. add the rest of the chicken stock (3 cups) {didn't take a picture of that but i'm sure you can imagine it} and bring to a low boil then reduce heat and simmer for about 15 minutes. 
add a splash (1/8 cup) of whipping cream 
and cook on low for a few more minutes. 

ladle into a pretty bowl 
and call it soup.

This has become one of our favorite soups! It's quick and easy and absolutely delicious. By the way, it freezes well, too.
