what's on your plate?
i started by portioning a dense handful of spinach, the remainder of a tomato, and a spoon of whipped cream cheese. not seen in the picture was a tablespoon of parmesan, a few turns of pepper, and twist of kosher salt. and 2 eggs beaten with a blurp of H2O.
after spraying a non-stick pan, i swirled the egg on the surface, put the heat on low, and covered the pan with its lid. once the egg was cooked and nicely set i added the cream cheese and spinach then turned one side of the egg over the other - leaving the spinach to spill out just a bit. 2 minutes later i plated the eggs with tomatoes, salt/pepper, and the parmesan cheese.

i was tempted to eat some things for breakfast that wouldn't have been good for my body. reaching for the carbs and refined sugar is something i'm challenged with - but this morning i forced myself to eat healthy - and i'm glad i did. patting myself on the back...
