stir fry. or, what to do with your leftover chicken.



stir fry.
this was *so* delicious.
you must try it - really you must.

let's start with the ingredients ::

*riced cauliflower : you can buy it riced (trader joe's) or rice it yourself using a hand held grater or food processor. 
*baby bok choy (i used 7)
*bell pepper (i used red-yellow-orange:3)
*scallions (i used 10)
*garlic (to taste .. i used 3 cloves)
*cooked chicken (i used leftover thighs)
*extra virgin olive oil
*red pepper flakes (a pinch)
*low sodium soy sauce (about 1/4 cup)
*honey (a couple tablespoons)

rice your cauliflower and put it in a nonstick pan first coated with the olive oil. toss well and keep tossing...



until it resembles this ..
remove from heat and put a lid on the pan.


prep your ingredients so you don't have to scramble when you need to throw them into the pan.


cut up your leftover cooked chicken 
into about 1/2 inch cubes ..


put some olive oil in a pan and throw the bell peppers in, adding pepper and garlic. toss well and cook at high heat. when the peppers begin to slightly char . . .


add the chicken and toss well. continue cooking just a bit.
{i heated my leftover chicken in the microwave first}


add soy sauce, honey, and red pepper flakes.
toss well and cook for one minute.


add the bok choy and scallions.
put the lid on.
wait 2 minutes.
you can use this time to fill
up your water glasses
and make sure the table
is set with forks & nappykins.


remove the lid and toss.
turn off the heat.
do ***not*** overcook
you NEED the greens to have
a bit of crunch.
common mistake is overcooking.


put a helping of the 
cauliflower rice in a pretty bowl.
and remind yourself that this is not rice.
it is a vegetable. and it's okay to eat
a healthy helping. for reals.


add a good serving of the tossed mixture.


pretty .. and healthy
pretty healthy.
enjoy.

  3. I need to go to Trader Joe's! I can't find riced cauli around here! That looks delicious! I think I say that about every recipe you share!

  4. I like all those things, and it looks really yummy. Never hear of riced cauliflower. I'll take your word for it cause there's no Trader Joe's within a hunard mile o' here! :D

  5. I picked up cauliflower rice at TJ's yesterday. I'm going to give it a try this week. :) Your stir fry looks delicious! We usually through in cashews or peanuts too...when the Sweet Pea isn't home.
